Worlds Largest Ice Cream Truck & Turkey Burgers

Catchy names, get more views. Now learn how to cook up some yummy turkey burgers! So if you are in California, the sun is still out and it's still hot. Summer is not over yet and Labor Day weekend is right around the corner. That gives us plenty of reasons to grill!! Here is a meal that you can grill that is rich in protein, vitamin D, and if you eat your veggies with it, you will get loaded with vitamins C and A as well.
TURKEY BURGER PATTIES WITH SAUTEED MUSHROOMS
2 lb at least 93% lean free range organic ground turkey/chicken
1/2 med red onion finely chopped
4 tsp + dash Worcestershire sauce
2 cloves garlic
1 tbsp tomato paste
1 finely chopped organic red bell pepper
2 eggs
2 tbsp flax seed meal
1 tsp salt
1 tsp black pepper
1/2 8oz container of organic bella mushrooms
1/2 8 oz container of organic shitake mushrooms
1 tbsp olive oil
Makes 8 Servings. In large bowl, combine all ingredients through black pepper and 4 tsp Worcestershire sauce. Shape into patties. Cook on grill or broil until thoroughly cooked. Meanwhile, sauté mushrooms in sauté pan with 1 tbsp olive oil and dash Worcestershire sauce. When burgers are done, top each burger with 1 tbsp mushrooms. Serve patty with Roasted One of my favorite side dishes to roast while the meat is cooking on the grill:
ROASTED SUMMER SQUASH WITH OLIVE OIL AND THYME
1 1/2 tbsp extra virgin olive oil to drizzle
Preheat oven to 400 degrees. Slice the veggies up and put in a roasting pan or casserole dish. Drizzle olive oil over the veggies. Sprinkle on a little salt and pepper. Arrange thyme sprigs on top. Roast in oven for about 20-25 min. Squash should be fork tender.
PEACHES AND CREAM FOR DESSERT
Cut up some peaches and/or nectarines. Throw those on the grill while you are eating your burger and veggies. When done, serve in small bowls with a tbsp vanilla greek yogurt. Top with a tbsp each of chopped pecans or walnuts. Yum, you got dessert.
